This bakers flour is made from wheat that has had the germ and bran removed then has been slowly stoneground, in a traditional manner, to give the flour a lighter, finer texture. The 00 rating indicates that this is the most refined flour (i.e. the finest) with the lowest level of bran. It has no additives, no agents, no chemical bleaching and no bromate in it. It acts as an all-purpose organic flour that creates a silky dough for making bread and pasta. 00 bakers flour maintains a yummy chewiness to it once cooked.
