Freekah is made from young, green wheat that has been gently roasted and rubbed to remove the tough outer husk, leaving behind a part-roasted kernel. This unique process allows the raw wheat’s naturally occurring nutrients to be retained. This wholegrain food is high in dietary fibre and digested slowly by the body, thus keeping you satiated for long periods of time. Freekeh has a smoky flavour with a firm, chewy texture making it a flavoursome alternative to many other grains. It is not gluten-free, however would be preferable over other gluten-containing grains because it is full of prebiotics which make it easier to digest and unlikely to cause upset in your gut.

Add 1 cup of freekeh to 2 ½ cups of water or stock and bring to the boil, then reduce the heat and gently simmer until all liquid has been absorbed and the grains are soft. This should only take approximately 15-20 minutes. Freekeh can be enjoyed as a warming porridge either on its own or paired with porridge oats, and is commonly used as a substitute for rice or quinoa.
